About Coconuts

Technically referred to as “drupes”, coconuts weigh about three pounds when fully matured, which only happens in consistently warm weather as coconut trees do not tolerate a cool climate. Coconut water and coconut milk differ in that the clear liquid inside the coconut is the water, while the milk is actually diluted coconut cream. Simply squeezing fresh coconut meat produces cream of coconut.

Coconut Benefits

While coconut “meat” is healthy for you, it does contain a substantial amount of saturated fat. However, similar to other nut meats, coconut contains more protein and less sugar than oranges, bananas or apples. Coconut also provides iron, zinc, phosphorous and other minerals. An interesting side note about coconuts, or more specifically, coconut water, is its ability to mix with blood, and consequently be used in emergency transfusions, a technique utilized during World War II.

Coconut milk smoothies can be a wonderful and healthy treat to enjoy. They can also make for a very tasty, non-dairy alternative. It is quick to make and a perfect way to start or end your day.

Orange Coconut Smoothie
1/2 orange, peeled and separated
1/2 Cup banana
1/2 Cup cream of coconut
1/4 Cup pineapple juice or other juice
1/2 Cup orange, pineapple or other flavor yogurt
5-6 ice cubes
Blend ingredients together in blender and blend until smooth.

Peaches and Coconut Smoothie
1 Cup peaches with juice
1/2 Cup cream of coconut
1 Cup peach or coconut yogurt
5-6 ice cubes
Add ingredients to your blender and blend.

Strawberry Coconut Smoothie
2½ cups Strawberries, tops removed and washed
Orange peeled and sectioned
1/2 Cup Coconut Milk
4 Ice Cubes
Put strawberries and orange in blender and mix until smooth. Then add coconut milk and ice cubes.

Fruity Coconut Smoothie

First put vanilla yogurt a cup of any vanilla yogurt you have will work.
Then add 1/3 cup of cranberries, strawberries, and bananas.
Then add a 1/3 cup of frozen lemonade.
Then add 1/6 of coconut cream.
Add 1/2 cup milk or 1/3 or orange juice which ever you prefer.
Then you can add any type fruit juice you want.
